Is there anything special I need to do so that adb can recognize my phone and tablet?
I turned on developer mode, but when I do "adb devices", I still get an emulator or nothing at all if there is no emulator.

I did a little more work on Google and found that if you install Samsung Kies, adb will begin to recognize Samsung products. =]
If you are running Windows, try installing the Samsung USB Driver for Windows . That should be enough ;-)
